Imperial / Double CoffeeStout: Bourbon Barrel Aged Imperial Stout with Panama Geisha Coffee 13.13% ABV In early 2019 we summoned Pennsylvania’s VooDoo Brewing to Anaheim to compare and combine our unique barrel aging techniques. Together we conjured a Double Mash Imperial Stout recipe built to withstand the curse of time in twelve extraordinary Heaven Hill bourbon barrels, where it stayed, buried alive for two full years.

Somniphobia is a small-batch variant on our Deprecophobia base, finished through enough coffee to wake the dead.

The malevolent mortals at Mostra helped us source and delicately roast a hauntingly delicious blend of Panama Geisha coffee beans from the legendary Finca Lerida farm. This singular finishing ingredient layers a bold milk chocolate character with whispers of walnut and honeysuckle into the unmistakable flavors of the beers prominent raisin, cookie dough, and tootsie roll-toned base. It’s devilishly viscous at 13% ABV and richer than crushed velvet in a mahogany coffin.–| 13.13% ABV

Strong Ale :Details and Dialects is a Bourbon and Rye Whiskey Barrel-Aged Peach Cobbler-inspired Strong Ale aged on Madagascar vanilla beans, then finished with Vietnamese cinnamon and mountains of fresh peaches.

Heirloom recipes are a type of dialect passed through time and bloodlines. Whether your sugared stone fruit and sweetened dough combine under the banner of a cobbler, a buckle, a sonker, a slump, a betty, a boot, or a pandowdy, the nuanced regional details weave an intricate tapestry for a dessert that stands as the herald of the summer season.13.55% ABV

Imperial / DoubleStout:Bourbon Barrel Aged Imperial Stout with Violets, Black Currant, and Tahitian Vanilla 14.55% ABV Currant War is a boutique collaboration with Homage Brewing inspired by the delicate flavors of French macarons. Floral aromas of Tahitian vanilla whet the senses for the tart brightness of black currant, quickly tempered by the savory roundness of vanilla beans on the mid-palate. Currant War was brewed with violet flowers steeped in the boil for a lingering finish of soft earth and early-summer sweetness. Medium-bodied and elegant with a present but pleasant heat from its 14.55% ABV.

Stout – Imperial / Double Pastry:Bourbon Barrel Aged Baklava-Inspired Imperial Stout 15.56% ABV This collaboration brew with Greece’s Seven Island Brewery celebrates the Antikythera Mechanism, an ancient analog computer dated to 87 BC. Research suggests the device had 37 gears to track celestial movements and predict astrological positions and eclipses decades in advance. Reverse Engineering was brewed to mimic the flaky richness of traditional Greek baklava before it was fermented with Orange Blossom Honey and finished with walnuts, hazelnuts, and pistachios for a decadent, honey-drizzled reenvisioning of liquid dessert.| 15.56% ABV

(1)Bottle Logic/Claremont Craft Ales Technical Challenge Imperial Stout

Imperial / Double Pastry Stout :Bourbon Barrel Aged Jaffa Cake-Inspired Chocolate + Orange Imperial Stout 13.77% ABV On your marks, get set, brew! Early last year we teamed up with our friends at Claremont Craft Ales to brew a Jaffa Cake-inspired Imperial Stout to age in bourbon barrels. One pandemic and a whole lot of Great British Bake Off bingeing later, we’re proud to present our Techincal Challenge to the judges!
Technical Challenge was built on a chocolate malt-heavy imperial stout recipe with a healthy helping of rye double mash base for a bold, bouncy body. The brew was finished with Madagascar vanilla and a mountain of Ecuadorian cacao nibs to build a rich chocolate complexity, then steeped on California orange peels for a bright, beautiful citrus note.13.77% ABV

Imperial / DoubleStout:Rum Barrel-Aged Imperial Tiki Stout 12.54% ABV Notes of orange zest and nutmeg garnish aromatic waves of dark rum and tropical fruit, setting the tone for this Painkiller cocktail-inspired imperial stout.

After eighteen months in Jamaican rum barrels, Broken Blender was pushed through three unique rounds of 300lbs of fresh coconut. The full-bodied sweetness of a cumulative 900lbs of coconut was tempered with 400lbs of sliced pineapple pieces for a vibrant tropical tang, then finished with a twist of orange zest and a dash of nutmeg.12.54% ABV
