Santo Fino Pure Mezquila begins with the careful selection of agave plants. The hearts of both blue agave, used for tequila production, and espadn agave, traditionally used in mezcal, are harvested at peak maturity. These agave hearts, known as pias, are meticulously cooked to extract their flavorful nectar, resulting in a harmonious blend of the two agave varieties.
